Coconut Mango Non-Dairy "Ice Cream"

 
Summer = Ice Cream? or Does It?
While ice cream offers one option for a delicious frozen treat, is it really ice cream you want? If you read the labels of many commercial "ice creams," dairy/cream components seem to be lower on the list of ingredients than cheaper artificial or 'natural' additives. The calorie-per-serving count of many dairy-based ice creams is often enough to make us rethink our craving.

It is Summer! There is no need to deprive yourself of a frozen delight. Perhaps it is just time to consider a healthier frozen treat for the more sophisticated palate!

Coconut Mango Non-Dairy "Ice Cream"


What You Need:
  • 3 cans of organic coconut milk
  • 3/4 cup maple syrup
  • 1/4 cup rice syrup
  • 2 tablespoons grated ginger
  • 1 tablespoon vanilla extract
  • 1 teaspoon sea salt
  • 4 cups of chopped mango
How It's Made

1. Combine coconut milk, maple syrup, rice syrup, ginger, mangoes, vanilla extract and salt in blender. Process mixture until well blended. Pour into large mixing bowl.

2A. If you have an ice cream maker. Pour mixture into ice cream machine and let it do it thing.

or

2b. If you do not have an ice cream maker.Once you have mixed your ingredients together, put them in a freezer safe bowl and place your mixture in the freezer. Every hour the mixture needs to be stirred so that it freezes into a fluffier, more ice cream like consistency.

2c. If you would rather have an on-the-go treat. Pour your ice cream mixture into Popsicle molds for a delicious healthy Popsicle!

Regardless of how you prepare this frozen treat, it contains no artificial sugar, preservatives, or colours, it simply allows the natural exotic flavours of mango and coconut milk to come alive in your mouth.
